Episode 001: Melissa

For our inaugural episode, we had the pleasure of chatting with Melissa - a planner for a state university, yoga instructor, and budding sailor. We discuss:

  • How having the resources to design spaces in smart ways can have a positive impact on students and communities
  • Asking for a raise when you love your job but aren't earning a sustainable wage and are afraid to "rock the boat" (hey, sailing pun!)

RECIPE: Soyrizo Breakfast Burritos (great for freezing!)
Makes 5 burritos

Ingredients:
5 burrito-sized tortillas
5 inches of soyrizo (you can also use regular chorizo)
3/4 can of black beans
1 cup frozen corn
1/2 diced yellow onion
4 eggs
5 slices of your favorite cheese (I use pepper jack)
Your favorite hot sauce (I like Tapatio or Papalote's salsa)
5 sheets of aluminum foil

Heat your pan to medium high heat, add some oil or butter and sautee your onions until slightly translucent. Squeeze in your soyrizo and break apart. Cook for about 2 minutes, then add your black beans and corn. Cook for another 3 minutes. Whisk eggs and add them to the pan. Cook until the eggs are fluffy. While cooking, heat/char your tortillas on the stove and prepare your foil. Place a tortilla on each piece. Place your cheese on the tortilla, add egg mixture, salsa and wrap. Either eat immediately or toss in the freezer. Burritos are best if consumed within one week.
