Episode 003: Kate

RECIPE: Zucchini & Mushroom Tacos
Servings: 2 (or 3 tacos each)

Ingredients:
1 package of your favorite taco-sized tortillas (I like the white corn tortillas by La Tortilla Factory)
2 medium sized zucchinis, chopped
1/2 package of white button mushrooms (sliced)
2 cloves of garlic (minced)
1/2 tsp garlic powder
1/4 tsp cayenne pepper (to taste)
1/2 tsp cumin
1 tbsp oil (I used olive oil)

Toppings:
Cotija cheese (to taste)
Cilantro (chopped)
Guacamole (optional)
Salsa (optional)

Sautee the zucchini in a shallow pan at medium-high heat for about 3 minutes. Add the sliced mushrooms and minced garlic. Sautee until fully cooked (about 7 minutes). Add seasoning as well as salt & pepper to taste. Prepare tortillas by heating over direct flame or on a pan. Place a scoop of the sauteed veggies on each tortilla. Top with cheese, cilantro, guacamole and salsa. We also had a side of black beans that Kate decided to add directly to her taco! There are no rules here. Enjoy!
